Time, humidity and judgement

Affinage: What Ageing Does to Cheese

Age alone does not improve cheese. Ripening works when moisture, temperature, airflow, microbes and turning are managed so the cheese develops rather than merely gets older.

Part 01

The affineur manages conditions, not just calendars

Cheeses may be turned, brushed, washed, moved between rooms or wrapped differently as they mature. The aim is to guide moisture loss, rind development and biochemical change.

Part 02

Temperature sets the pace

Warmer conditions generally speed microbial and enzymatic activity but also increase risk. Cooler maturation slows the process and can favour a different balance of texture and flavour.

Part 03

Humidity protects the rind from extremes

Air that is too dry can crack a cheese or halt surface growth; air that is too humid can encourage unwanted slime or mould. Each style has its own useful range.

Part 04

Longer can mean deeper, not necessarily better

A young cheese may be bright, milky and elastic; an older one may be dense, savoury and crystalline. These are different experiences rather than a simple quality ladder.

Part 05

The cheese tells you when it is ready

Good maturation is sensory. Texture, aroma, rind condition and flavour matter more than a prestige number printed on a label.

2020 Muga Reserva

Why it caught our eye

Muga`s standard Reserva is one of Rioja`s most reliable wines, showcasing the family`s traditional approach to winemaking. Fermented in oak vats and aged in a mix of French and American oak barrels from their own cooperage. The 2020 vintage was exceptional in Rioja, producing wines with ripe fruit, structure and freshness. Predominantly Tempranillo with supporting roles from Garnacha, Mazuelo and Graciano. Red cherry, strawberry and plum with vanilla, cinnamon and a touch of leather. Medium bodied with smooth tannins and bright acidity keeping everything lifted. The oak is present but not overwhelming, adding spice and texture without masking the fruit. There`s savoury complexity developing already with hints of tobacco and earth. Serve at room temperature (16-18°C). No decanting needed but won`t hurt if you have time. Excellent with tapas, grilled meats, cured ham, aged cheese, or tomato-based dishes. Drinking beautifully now, will continue to develop over 8-10 years.
