New Year’s Eve drinks: fizz at midnight, but a better plan for the whole evening.

New Year’s Eve is easier when the first drink, dinner wine, long drinks and midnight fizz are treated as separate moments rather than one continuous high-strength session.

What to pour

Four ways into New Year’s Eve.

The deeper guide

New Year’s Eve is a pacing problem as much as a drinks problem.

01

Do not make midnight the first plan

A successful New Year’s Eve drinks plan covers the whole evening: arrival, food, long middle stretch, midnight and whatever happens afterwards. Starting with the strongest drinks usually makes the later part worse.

Long drinks, beer, wine, alcohol-free serves and water all have a role before the midnight bottle appears.

02

Sparkling wine is about timing

Fizz works beautifully for arrival or midnight because the sound, glass and bubbles create a clear celebratory cue. It does not need to be the only drink served all night.

Chill enough bottles in advance and include a genuinely good alcohol-free sparkling option so nobody is handed a lesser substitute at midnight.

03

Batch cocktails beat an improvised bar

If cocktails are part of the evening, choose one or two that can be prepared ahead and diluted correctly. Trying to make individual complicated drinks for a room full of people is rarely enjoyable for the host.

A batched alcohol-free counterpart makes the same presentation available to everyone.

04

Food keeps the evening together

Salty snacks, cheese, charcuterie, fried food and small savoury dishes are more useful than very sweet food for a long evening. Sparkling wine, lager, cider and bitter aperitif-style drinks all handle salt and fat well.

Coffee can be useful later, but it should not be presented as a way to reverse intoxication.

Useful buying & hosting shortcuts

Midnight

Buy the sparkling bottle for the number of people who will actually drink it, not for symbolism alone.

All evening

Have lower-alcohol and alcohol-free choices visible from the start, not hidden as alternatives.

Hosting

Ice, glassware, water and refrigeration capacity matter as much as the bottle list.

Pair it well

The seasonal food matters as much as the glass.

Use intensity, sweetness, acidity, roast and aroma as the bridge between food and drink rather than relying on colour or tradition alone.

Sparkling wine & salty snacks

Acidity and bubbles are exceptionally food-friendly.

Highballs & small plates

Long drinks stay refreshing across varied food.

Coffee & late dessert

A useful change of pace before midnight.

Low & no

Keep the occasion. Change the alcohol.

Sparkling tea, alcohol-free fizz, tonic-led highballs and coffee can create clear “moments” across the evening without continuous alcohol.
