Storing, Cutting & Serving Cheese

Cheese is still changing after you bring it home. The aim is to slow unwanted drying and spoilage without sealing a living food into the wrong environment.

Cheese wrapped for storage and cut for serving on a board

Part 01

The fridge is necessary but not perfect

Cold storage slows microbes and enzymes, which is useful for keeping cheese safe, but very cold cheese tastes muted. Letting a portion lose its chill before serving usually improves aroma and texture.

Part 02

Wrapping should balance protection and breathing

Specialist cheese paper or a loose paper-and-box approach can reduce drying without trapping as much condensation as tight cling film. Different cheeses tolerate different levels of sealing.

Part 03

Keep strong neighbours in mind

Washed-rind and blue cheeses can perfume milder cheeses if stored together unprotected. Separate wrapping preserves both flavour and microbial boundaries.

Part 04

Cutting changes the experience

A wedge should ideally give each person some paste from near the centre and near the rind where appropriate. Cutting only the soft nose from Brie or the heart from a wedge leaves everyone else a different cheese.

Part 05

Build a board around contrast, not quantity

Three or four cheeses with clearly different textures and intensities usually tell a better story than eight similar ones. Add bread, fruit or condiments to support the cheese rather than bury it.
