Texture explained

Snap, Crumble, Chew — and Dunk

We often describe biscuits with sound and behaviour: snap, crunch, crumble, bend, chew and dunk. Each one is a clue to structure and moisture.

Part 01

Snap is brittle fracture

A dry, well-set biscuit stores energy as it bends very slightly, then releases it suddenly as a crack. Thickness, porosity and moisture all change the force required.

Part 02

Crumble comes from a weak continuous network

Shortbread feels sandy because fat and limited water prevent a strong protein network from forming. The structure breaks into small tender pieces rather than one sharp fracture.

Part 03

Chew needs retained moisture and flexibility

Soft cookies often contain more hygroscopic sugars or syrups, retain more water and develop a less glassy structure. They deform before they finally break.

Part 04

Crunch is repeated fracture

Porous or laminated products can fracture many times as you bite, producing a longer crunchy experience rather than one clean snap.

Part 05

Dunking is controlled failure

Hot drinks move into pores, dissolve sugar and soften starch/protein structures. The ideal dunk time depends on porosity, thickness, fat, coating and whether the aim is gentle softening or complete structural collapse.

Water Crackers

Why it caught our eye

A neutral water cracker, made in Yorkshire, that is deliciously crisp and toasty. A perfect accompaniment to any cheese. Made in Yorkshire. Because they don’t contain any leavening agent like yeast or baking powder, water crackers are notoriously hard to make; they are difficult to bake and need flame grilling. Hence very few biscuit companies make them. It is this lack of ingredients that made them long lasting and ideal for sea voyages – hence their nickname “ships biscuit”. Produced just outside Leeds, these crackers are still made to traditional methods that include flame grilling and using only the finest Yorkshire water. These now come in a round shape rather than rectangular and are labelled ‘Yorkshire Crackers’.
