What happens before the oven

Dough Chemistry & Aeration

Mixing is where texture begins. Air bubbles, gluten development, dissolved sugar, fat crystals and raising agents all set the stage for the bake.

Part 01

Creaming creates tiny air cells

Beating solid fat with sugar can trap air. Those bubbles expand as the biscuit warms, helping create a lighter structure without the fermentation associated with bread.

Part 02

Chemical raising agents release gas

Bicarbonate of soda, baking powder and ammonium bicarbonate can all create carbon dioxide under the right conditions. Ammonium bicarbonate is especially useful in low-moisture industrial biscuits because volatile ammonia can escape during baking.

Part 03

Gluten is useful until there is too much of it

A strong gluten network can make a sweet biscuit tough, but crackers may need enough elasticity to survive sheeting and lamination. Mixing time and water content help determine where the dough lands.

Part 04

Resting changes handling

A rested dough can become easier to sheet as stresses relax and water redistributes. In some recipes chilling also firms fat, limiting spread and preserving shape in the oven.

Part 05

Docking has a purpose

The small holes in many crackers and biscuits allow steam to escape and reduce uncontrolled blistering. They are process marks disguised as decoration.

Water Crackers

Why it caught our eye

A neutral water cracker, made in Yorkshire, that is deliciously crisp and toasty. A perfect accompaniment to any cheese. Made in Yorkshire. Because they don’t contain any leavening agent like yeast or baking powder, water crackers are notoriously hard to make; they are difficult to bake and need flame grilling. Hence very few biscuit companies make them. It is this lack of ingredients that made them long lasting and ideal for sea voyages – hence their nickname “ships biscuit”. Produced just outside Leeds, these crackers are still made to traditional methods that include flame grilling and using only the finest Yorkshire water. These now come in a round shape rather than rectangular and are labelled ‘Yorkshire Crackers’.
