Why this wine matters

How it is made
In 2024, most fruit was whole-cluster pressed while a small portion received cold maceration. Fermentation took place in stainless steel, malolactic in concrete, followed by lees ageing mostly in concrete with a small large-oak component.
What does it taste like?
Floral and white-fruit notes meet subtle pastry, high acidity and deep mineral character, with a refined, ample finish.
Serve it well
Serve around 10–12°C.
If this wine were human…
If Passobianco were human, it would be composed, self-contained and not remotely interested in shouting across the table.
Does any of this sound suspiciously familiar?
Composed, self-contained and not remotely interested in shouting across the table. You like confidence, but not the sort that needs to keep announcing itself.
At dinner, you are the person who quietly improves the seating plan without ever admitting there was a seating plan. Secretly, you like old-fashioned things when they are done with enough confidence to feel modern again.
In short: composed, self-contained and not remotely interested in shouting across the table. etna chardonnay energy, translated into a person.
Purely for fun — this is the wine’s fictional personality, not a psychological reading of yours.
