Why this wine matters
More than a famous label.
The 2021 is 100% Chardonnay and spends four years on the lees in bottle. That makes it a particularly useful benchmark for showing what long lees ageing can do outside Champagne.

Why this wine matters
The 2021 is 100% Chardonnay and spends four years on the lees in bottle. That makes it a particularly useful benchmark for showing what long lees ageing can do outside Champagne.
How it is made
The fruit is hand-picked and whole-bunch pressed. A small portion ferments in barrel, malolactic fermentation is blocked to retain acidity, and the wine undergoes secondary fermentation in bottle before roughly four years on lees and a further rest after disgorgement.
What does it taste like?
Citrus leaf, nectarine and lemon meet sea-spray, oyster-shell and flint, followed by sourdough, brioche and a creamy lees-derived middle.
Serve it well
Serve around 8–10°C. A tulip-shaped sparkling glass will show more aroma than a narrow flute.
