Why this wine matters

More than a famous label.

Bailly is the birthplace of the Crémant de Bourgogne appellation, and the cooperative has specialised in sparkling wine there since 1972. The Réserve blends all four principal grapes of the appellation and is deliberately its most accessible style.

How it is made

The decisions behind the style.

The grapes are hand-picked, pressed gently and vinified separately before blending. The second fermentation takes place in bottle, with around 12 months of maturation in Bailly Lapierre’s naturally cool underground limestone cellars.

What does it taste like?

The shape of the wine.

The style is rounded and easy-drinking but still crisp, with orchard fruit, light floral notes and a distinctly mineral freshness rather than heavy toastiness.

Does any of this sound suspiciously familiar?

Has a long story, a good opening line and enough energy to keep both moving. You can be patient for a surprisingly long time, provided the result is actually worth waiting for.

At dinner, you can rescue an awkward silence with one question and then let everyone else take the credit. Secretly, you are delighted when somebody else spots the detail you were hoping they would notice.

In short: has a long story, a good opening line and enough energy to keep both moving. crémant energy, translated into a person.

Purely for fun — this is the wine’s fictional personality, not a psychological reading of yours.
